Sun's Up at Harmony Hill with a lesson in nutrition as Earth Week continues

April 14, 2011 - It may have been gloomy outside, but the sun was shining at Harmony Hill School on Wednesday when hundreds of students were treated to a nutrition quiz and a hands-on cooking demonstration designed to teach kids that whole, healthy foods can be tasty too.

As part of the school's Earth Week activities, the students -- all decked out in yellow in celebration of the sun -- participated in a program by Price Chopper Kids Cooking Club with Jodie Fitz. Ms. Fitz and Registered Dietician Christa Valentine worked in tandem to provide nutrition activities and helpSun's Up at Harmony Hill guide the students in making a healthy snack for themselves.

To coincide with that day's celebration of the sun, Ms. Fitz led small groups of students through the steps of making a fruity, frosty and healthy shake called a Sun's Up Smoothie. Ms. Fitz explained to the students that in making the smoothies they would be "grabbing the rays of the sun" by using ingredients that resemble the colors of the sun. After pouring and enjoying the mid-morning treat, Ms. Fitz revealed to the students that one surprise ingredient of her sunny recipe is: carrot juice! The recipe for the Sun's Up Smoothie prepared by the students and brought to Harmony Hill by the Kids Cooking Club follows:

Sun's Up Smoothie
1/2 banana
1 cup ice
3oz vanilla yogurt
1 cup 100% orange juice
1/2 cup milk
1/8 cup carrot juice
1 Tbs. honey
1/2 tsp. vanilla extract

Combine all ingredients in a blender until smooth. Pour and enjoy.
